Whole Wheat Challa (Sossia).

4 Tbl. yeast
3 1/2 cups warm water
1 cups Sugar
1/4 cup Honey
1 cup oil
2 Tbl. salt
5 eggs
7 cups whole wheat flour
6 cups white flour
 
 
Dissolve yeast in warm water and sugar.
Mix: eggs, oil, salt,
Add: whole wheat and white flour. Mix for 5 seconds.
Add: the risen yeast, and mix 15 Minutes. While it is mixing squeeze in honey about 3 squirts into the mixing batter.
 
Mix and knead well about 15 minutes (may need to add more flour) . Oil dough and let sit and rise for 2 hours.
 
Punch dough. preheat 375. Let challa rise another half hour once shaped.
Mix one egg and 2 Tbl. Honey and egg the challos.
Bake half an hour (or more) make sure its crispy
or it can be raw inside.
 
Tricks:
  •  to get softer dough mix the oil and the eggs
  • while batter mixes add a little more honey to the mixture.
